Madrid, March 4 – Chic By Rosi La Loca, a restaurant located in the city’s Literary Quarter, has been awarded the prestigious title of the Best Potato Omelette in Madrid for 2026. The establishment, which opened its doors just four months ago, secured the top prize in a competition organized by the Association of Cooks and Pastry Chefs of Madrid (ACYRE).
The Winning Omelette: A Blend of Balance and Technique
Javier Alfaro, the chef behind Chic By Rosi La Loca’s culinary offerings, led his team to victory. The winning omelette was praised by the jury for its exceptional balance and technical execution. Alfaro shared insights into his recipe, revealing a meticulous approach:
- Eggs: A mix of whole eggs and yolks from Granjas Villarreal.
- Potatoes: Soprano potatoes from La Chulapona.
- Onions: Very slowly cooked and caramelized spring onions for a creamy texture and intense flavor.
The omelette is served individually and priced at 12 euros, reflecting the quality of its ingredients and preparation.

Chic By Rosi La Loca, situated at Cádiz, 7, is part of the Rosi La Loca World group, which also owns six other establishments including Rosi La Loca and Inclán Brutal Bar. The restaurant’s concept focuses on Mediterranean gastronomy with fusion influences and creative cocktails, all within a setting inspired by ‘temptation and paradise’. The group has a track record of culinary success, with other venues having received accolades such as the Best Bravas in Spain 2025, the third Best Russian Salad in the Community of Madrid, and the Best Cheesecake in Madrid 2024.
The Podium: Second and Third Place Honorees
The competition saw strong contenders, with Taberna Cosme and Bulevar 54 securing the second and third positions, respectively.

Chef José Manuel Cosme described his recipe: “Potato, onion, lots of onion, very roasted. Besides the eggs, I also add yolks to make it creamier. I emulsify it and cook it lightly.” - Third Place: Bulevar 54 (Juan Bravo, 54)
Daniel Blázquez of Bulevar 54 presented a simpler yet effective approach: “We make a simple preparation, like my grandmother used to; a well-poached spring onion and a potato confit in extra virgin olive oil. Then we add six eggs and two yolks.”
The Finalists and Esteemed Jury
Alfaro, Cosme, and Blázquez triumphed over five other finalists, including Viviana Caro from Bestial, Jethromar Dacumos from El Parador, María Cecilia Malan from Etiqueta Negra, Javier Pascual from Gran Hotel Inglés, and Jorge Baeza from La Savina.
The judging panel comprised distinguished figures in the culinary world:
- Iván Muñoz, from Chirón restaurant.
- Aurelio Morales, a renowned gastronomic advisor and chef with a Michelin star and two Repsol Suns.
- Alejandro Oliveira, a multiple-time winner of the Best Potato Omelette in Spain competition.
- Eduardo Casquero, president of ACYRE Madrid.
