Madrid, January 22 – The Community of Madrid, in collaboration with Hostelería Madrid, has unveiled a new culinary initiative titled ‘A Fuego Lento’ (Slow Cooked), designed to entice visitors to explore the region’s ‘Eleven Villas’ through their traditional winter gastronomy. This route, featuring over 50 culinary proposals, emphasizes local products, traditional recipes, and the rich cultural heritage of these municipalities.
A Spoonful of Tradition: Connecting Travelers with Local Customs
The ‘A Fuego Lento’ guide highlights an array of traditional dishes, including stews, soups, escabeches (marinated dishes), and roasts, all prepared with proximity products. The objective is to offer travelers a deeper connection with the customs and communities of the participating towns.
“This initiative is a way to contribute to the economic revitalization and commercial dynamism of the localities that form part of the Villas de Madrid,” stated a representative from the Community of Madrid during the presentation.

These villages, renowned for their historical and cultural significance, are now also positioned as culinary destinations, especially during the colder months when hearty, traditional dishes are most appreciated. An example of the featured dishes includes “Olla de ternera al desarreglo,” a traditional beef stew from Colmenar de Oreja.
